Whole30 – Day 15: Half Way

green curry lunchHalf way – woo!  Still feeling really good.

Today I made zucchini fritters for breakfast.  These were super easy; I mixed together:

  • 1x large grated zucchini
  • 1x grated carrot
  • few chopped spring onions/shallots
  • 2x eggs
  • 2x tablespoons coconut flour
  • salt & pepper

… then fried in coconut oil for a few minutes each side and served them with smoked salmon – yum.

Lunch was ‘al-desko’ chicken salad with avo, olives, greens, baked sweet potato and olive oil dressing.

Dinner was a delicious Thai green chicken curry made by Mum (still reaping excellent benefits of our current house guest!) with lots of veg – super good, and enough leftover for lunch tomorrow – yay!
