A few of you have asked for my recipe for Paleo Banana Bread – so here it it!
Truth be told I free-style this one a lot! I just chuck in whatever is around, and often use different quantities of bananas, natural sweeteners and spices. There is endless potential for variations – try adding different spices/ cacao/ dates/ fresh berries/ etc.
Sometime I make a loaf which requires a bit longer in the oven, and sometimes I make them into mini muffins. This recipe is soo simple and keeps in the fridge for up to a week.
Last week I made a particularly good one – here is how:
Serves:
8-10 slices
Ingredients:
- 3x large bananas
- 4x eggs
- ½ cup almond meal
- ¼ cup coconut flour
- 1 tsp vanilla
- 1 tsp baking powder
- 1Tbsp cinnamon
- ½ tsp ginger
- ½ tsp nutmeg
- ½ tsp cloves
Method:
- Preheat the oven to 180 degrees Celsius
- Line a loaf tin with baking paper
- Put all ingredients in a food processor* and blend until well combined
- Pour into baking tin
- Bake for 40-45 mins, or until a skewer comes out clean
Serve with lashings of butter!
*if you don’t own a food processor: mash the banana with a fork, whisk the eggs, then mix everything together in a large bowl.
